Nitrous oxide (food additive E942) is highly soluble in fatty compounds, including cream and other substances used in cooking. When used in a siphon, the gas combines with the food substance inside at the molecular level. When nitrous oxide combines with oxygen, a chemical reaction occurs that not only turns the food substance into a more voluminous foam, but instantly infuses flavors.

MAFIA N20 cylinders come with an adaptor for easy connection to any leading brand cream dispenser, for use at home or in commercial kitchens. The pressure regulator and adaptor hose are supplied separately. Please see our product page for our recommended cream dispensers.

Yes, our N20 MAFIA products can be recycled. The cylinders are made from recyclable steel, meaning you can throw them in with your metal waste for collection. The cylinders are not refillable and can only be recycled once empty. Each N20 MAFIA cylinder comes with a white discharge nozzle, allowing you to ensure all gas is released from the device before recycling.

Unfortunately, given that nitrous oxide is a very controversial topic at the moment in terms of its potential application for recreational misuse, as well as its impact on the environment, it is very difficult for our team to circumvent defamation and other actions that exploit the misuse of these products.

What to do if...

N20 MAFIA product is not working as it should

Check that the pressure regulator is securely attached to the cylinder and that the hose is securely attached to it. If this problem persists, please contact us for assistance [email protected]

If the cream or foam produced is too liquid, check that you are using a product with a minimum fat content of 28% +

This can also mean that it takes longer for the reaction between the gas and liquid inside the dispenser to occur. To achieve the desired thickness, hold the dispenser upside down and shake vigorously for 10 seconds.

If it is still too liquid, this may indicate that the maximum content of the cream dispenser has been reached. Or that you need to add more nitrous oxide charge.

If the cream or foam is too thick and difficult to disperse, it may be because it is too cold. This happens if you keep the dispenser in the refrigerator. It may also be because you have shaken the cream dispenser too much. Note that the recommended time to do this is about 10 to 15 seconds maximum.

This could mean that there was not enough pressure in the distributor and more nitrous gas needs to be added, or that the distributor is clogged. If it is clogged, run the distributor nozzle under hot water for a few minutes and try again by shaking the distributor vigorously.

Note: Do not attempt to open the dispenser head without first distributing all the gas inside.

If all the components of the N20 MAFIA are in place and this still happens, it may indicate that the silicone seal on the head needs to be replaced or that the distributor head is broken. If the leak does not stop and the distributor is not broken, carefully disassemble the distributor once the gas has dispersed and contact us for assistance at [email protected]

Note: Do not try to unscrew the dispenser head under pressure, the gas inside must be dispersed first.

This could be due to the top of the dispenser being clogged or excessive shaking of the dispenser, as excessive shaking can result in cream or liquid that is too dense which can prevent the gas from being released. If this happens, run the top of the dispenser under warm water to help loosen the dense liquid inside so the gas can be released and the head can be unscrewed.
